Heinz Beanz and Sweetcorn Fritters with Tomato Chutney

These tasty sweetcorn fritters are given an extra special twist – they feature our favourite Heinz Beanz! This dish would make a lovely weekend breakfast or quick, easy dinner. Plus, they're a great way of incorporating more veggies into your diet.

Ingredients

  • 1 tin Heinz Beanz or Heinz No Added Sugar Beanz
  • 140g (4.9oz) tin sweetcorn (drained)
  • 3 spring onions (finely sliced)
  • 1 tsp cayenne pepper
  • 2 medium eggs (beaten)
  • 85g (2.9oz) gram flour
  • 1 tsp baking powder
  • 2 tbsp vegetable oil
  • Coriander (to serve)
  • Tomato chutney (to serve)
  • Sliced avocado (to serve)

Method

  • Step 1

    Combine the sweetcorn, Heinz Beanz, spring onions and cayenne pepper in a bowl. Add the beaten eggs and mix well.

  • Step 2

    Sieve over the gram flour and baking powder and fold through until fully combined.

  • Step 3

    Heat the oil in a large nonstick frying pan and, using a dessert spoon, scoop out two spoonsful for each fritter into the pan. Fry for 2 minutes until you see bubbles forming on the surface and they are golden, flip and cook for a further 2 minutes

  • Step 4

    Once cooked transfer to a kitchen paper lined plate to drain off any excess oil. Keep warm in a low oven while cooking the remaining fritters.

  • Step 5

    Serve with tomato chutney, a sprinkle of coriander, avocado and more Beanz if desired.
