Heinz Beanz Chicken Parmigiana

This tasty mid-week recipe combines three of our favourite things – chicken, cheese and Heinz Beanz! Follow the recipe below, and you'll have a nutritionally balanced meal the whole family can enjoy.

Ingredients

  • 2 tins Heinz Beanz or Heinz No Added Sugar Beanz
  • 50g (1.7oz) dry breadcrumbs
  • 50g (1.7oz) Parmesan (finely grated)
  • 1 tsp dried oregano
  • 0.5 tsp ground black pepper
  • 1 egg
  • 2 large skinless chicken breasts
  • 50g (1.7oz) grated mozzarella
  • chopped parsley
  • Green salad

Method

  • Step 1

    Preheat oven to 200°c fan (Gas mark 6)

  • Step 2

    Take two wide shallow bowls, in one mix together the breadcrumbs, half the parmesan, oregano and pepper. And in the other beat the egg.

  • Step 3

    Cut the chicken breasts in half through the middle, place between two sheets of cling film and bash with a rolling pin until they are an even thickness, about 3cm.

  • Step 4

    Dip the chicken breasts one at a time in the egg and then the breadcrumb mix to fully coat.

     

  • Step 5

    Place onto a lined baking sheet and bake in the oven for 20 minutes until golden and crisp. Meanwhile, warm the Heinz Beanz in a small saucepan.

     

  • Step 6

    Lay the cooked chicken in an oven proof dish, top with the Heinz Beanz and finish with the grated mozzarella and remaining parmesan.

  • Step 7

    Place under a hot grill until the cheese is golden, melted and bubbling.

  • Step 8

    Serve with a sprinkle of chopped parsley and a green salad
